🥜 Peanut Butter Cookies Recipe

These homemade peanut butter cookies are melt-in-your-mouth delicious, easy to whip up in one bowl, and always a crowd-pleaser. With a golden crisp outside and chewy center, they’re perfect with a glass of milk or a cup of coffee.


Ingredients (makes about 24 cookies)

  • ½ cup (1 stick) unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • ½ cup creamy peanut butter (or chunky, for extra texture)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Instructions

  1. Preheat oven:
    • Heat oven to 350°F (175°C).
    • Line baking sheets with parchment paper.
  2. Make the dough:
    • In a large bowl, cream butter, granulated sugar, brown sugar, and peanut butter until smooth and fluffy.
    • Beat in egg and vanilla.
    • In another bowl, whisk flour, baking soda, baking powder, and salt.
    • Gradually stir dry ingredients into wet mixture until just combined.
  3. Shape the cookies:
    • Roll dough into 1-inch balls. Place on baking sheets, about 2 inches apart.
    • Using a fork, gently press down to make a crisscross pattern on each cookie.
  4. Bake:
    • Bake for 10–12 minutes, until edges are lightly golden.
    • Cookies will still be soft in the center — they firm up as they cool.
  5. Cool & enjoy:
    • Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
